Did you ever tried something with zucchini, like meatballs for instance, but instead of mangled meat, you add zucchini? And what about a cake with zucchini? No, we aren’t joking with you. Actually, the zucchini cake is something delicious and now we are going to show you how exactly to do it.
Ingredients:
Zucchini – 1 kg.
Eggs – 5 pc.
Tomatoes – 300 gr.
Full grain flour – 1 tbs.
Yoghurt – 350 gr.
Garlic – 2-3 pc.
Yellow cheese – 150 gr.
Green onion – 2 pc.
Salt and pepper.
Directions:
Grind the zucchini and remove the extra water. Add five eggs, salt, pepper and mix well. Add the flour next. Mix again until dough is formed with the thick pancake mixture like consistency.
Heat the frying pan and put some butter into it. With bigger spoon or ladle pour some of the dough and form a pancake. The already cooked pancakes will be a main ingredient of the cake. Cook every pancake until it becomes golden.
Meanwhile, while making the pancakes, you can start with the cake’s cream. To make it mix the yoghurt with the garlic. Add salt and pepper. You can add some fresh vegetables or herbs. Don’t forget the cake’s filling – tomatoes, green onion and yellow cheese.
With everything already done, you can start arranging the cake. Keep in mind that the products must be cold, not still hot. In big plate you arrange the cake in the following way – pancake, cream, filling. You keep doing this until there are no more products left. You can add mayonnaise, cream cheese or anything else to the last pancake that is on the top. After that you might want to garnish with fresh green veggies, cherry tomatoes, or carrot pieces.
