Recipe: Tiramisu Crepe Cake

The Tiramisu Crepe Cake is a fun variation of the traditional tiramisu. It requires one main ingredient - crepes! Thanks to these crepes with coffee, the cake captures the charm and flavor of the traditional Italian tiramisu. Sweet and rich cream with mascarpone and rum contributes to the exceptional taste of the cake.

Ingredients

For the pancakes with coffee

  • 200 ml of coffee
  • 100 ml of milk
  • 2 tbsp butter
  • 2 tsp sugar
  • 1/2 tsp salt
  • 120 g flour
  • 3 eggs

For the easy mascarpone cream

  • 500 g mascarpone
  • 2 tbsp. rum essence
  • 300 g cream
  • 50 g. icing sugar
  • Cocoa for sprinkling

Instructions

For the pancakes with coffee

  1. Mix the ingredients for the pancakes.
  2. Heat a frying pan over medium heat. Depending on the pan, you can add a little butter.
  3. Pour 1/4 cup of the batter into the hot pan.
  4. Fry the pancakes until the surface is firm (about 45 seconds).
  5. Flip the pancakes and cook another 10-15 seconds on the other side.
  6. Repeat until all the batter is used.
  7. Let the pancakes cool.

For the easy mascarpone cream

  1. Mix the mascarpone and rum essence until smooth and creamy.
  2. Whisk in the cream and icing sugar.
  3. Add the whipped cream to the mascarpone mixture and whisk until smooth. Do not over mix.

Assembling the cake

  1. Spread 1 tablespoon of the cream in the center of the cake plate. This helps the cake stick to the plate.
  2. Place one pancake on top.
  3. Spread about 2 large spoonfuls of the cream.
  4. Sprinkle with cocoa powder if desired. Repeat to the last pancake.
  5. Decorate with remaining cream and sprinkle with cocoa powder.
  6. Chill the cake in the refrigerator for at least 1 hour before serving.
